Mezcal and tequila are two of Mexico’s most iconic drinks, each with its own history, production processes, and unique characteristics. Although they are often confused, there are significant differences worth exploring.
Origin and Denomination of Origin
Tequila: The Tequila is a spirit that must be made in certain regions of Mexico, mainly in the state of Jalisco, as well as in parts of Nayarit, Guanajuato, Michoacán and Tamaulipas. It is produced exclusively from the blue agave (Agave tequilana Weber).
Mezcal: The Mezcal, on the other hand, has a broader designation of origin. It can be produced in several regions of Mexico, including Oaxaca, Durango, San Luis Potosí, among others. Additionally, it can be made from several varieties of agave, such as espadín, tobalá, tepeztate, arroqueño, and more.
In the production process, tequila is more industrialized. After harvesting, the blue agave is cooked in masonry ovens or autoclaves and then fermented with yeast in stainless steel vats, resulting in a liquid that is distilled twice. Mezcal is generally more artisanal. The agave piñas are cooked in stone ovens or in underground hearths, which gives them a distinctive flavor. Fermentation then takes place naturally, and the mezcal is distilled twice in a copper still.
And what about the flavor and aroma?
Tequila tends to have a cleaner, lighter flavor profile, with notes of herbs, citrus, and in some cases a hint of vanilla or caramel, especially in aged versions (reposadas and añejas). In contrast, mezcal is known for its complexity and depth of flavor. Cooked agave is a prominent feature, along with earthy and fruity notes. Each type of agave can contribute different nuances, making each mezcal unique.
